cheese: Our cheese is made from raw whole milk.  We've made both hard and soft cheese.  The soft cheese is nice for spreading on crackers.  One gallon of milk gives us approximately one pound of cheese. Curds are cut in the pan and then the curds and whey are separated.
Picture to the right and below is our hard cheese.  One to two weeks after it is made it is dipped in wax and placed in the refrigerator to age.  The longer it ages the stronger the flavor.
